Corfu Recipes - Spaghetti with Prawns
This page gives you the opportunity to re-create some of your favourite Corfiot taverna recipes at home. This time, Spaghetti with Prawns. (Frozen prawns are usually sold preboiled and cleaned. If the ones you buy are not preboiled then you should boil them first to soften.)
Ingredients - 500 gr spaghetti. Small frozen prawns. (The amount depends on how many prawns you want on your spaghetti.) 6 fresh tomatoes, peeled and cut into small pieces. 3 garlic cloves, thinly sliced. Olive oil. Salt and Pepper. Chilli. Parsley.
Instructions - Boil the spaghetti in a large saucepan. Meanwhile, in another saucepan, heat the oil and add the garlic, the tomatoes and the prawns. Saute for 2 to 4 minutes and mix well. Add the chilli, salt and pepper, depending how spicy you want the sauce to be. Mix the sauce with the spaghetti and serve. Garnish with fresh parsley.
