Corfu Recipes - Beef and Pea Stew

Ingredients - 800 gr stewing steak cut into 3 centimetre cubes. 1 kg peas (fresh or frozen). A bay leaf. Two medium onions, chopped. 4 tbsp fresh parsley. 1 handful of fresh dill. Two large tomatoes. 1 tsp sweet paprika. 2 cups olive oil. Salt and pepper.
Instructions - Gently sauté the onions in a saucepan containing the olive oil and the bay leaf. Add the meat and sauté until all its juices have evaporated. Blend or finely chop the tomatoes, parsley and dill and add to the pan. Stir until boiling and add two cups of hot water, salt and pepper. Lower the temperature, cover and simmer for an hour, checking and stirring occasionly. Add the peas and paprika and slowly simmer until the peas are done and all the water has evaporated, leaving only oil at the bottom of the pan. Seve with rice or potatoes.
