Ingredients - 5 or 6 large cooked potatoes. Half a tablespoon of crushed garlic.
1 teaspoon salt.
1 tablespoon red wine vinegar.
The juice of one and a half lemons. Three-quarters of a cup of olive oil.
1 cup chopped parsley.
Instructions - Drain the potatoes and cut into pieces.
Add all the ingredients (except the parsley) and stir gently until the oil has been absorbed by the potatoes. When the salad has cooled a little add the parsley. Serve at room temperature.
